Ok ya'll, I don't know about you, but I freaking love potatoes. Mashed potatoes, baked potatoes, french fries, potatoes au gratin. If its a potato or has potato in it, I will eat it. We all know that potatoes aren't totally healthy. They are a starchy, carby (is that a word?), not so scale friendly food. I decided to start mixing it with my veggies so that instead of a full serving of potatoes it's really half of a serving since it's mixed with some vegetables. I end up feeling like I've eaten a bunch of the delicious starch, but in reality it's not really that much. I asked you guys via Instagram if you wanted this recipe and had only one person say no (they probably don't like brussels sprouts). So here it is! Enjoy!
