You guys, Fall is here!!!! Scream it from the rooftops. I absolutely love everything about Fall. The colors, the fashion, the holidays, my birthday... and most importantly the food! The earthy feeling of all. thinks squash and pumpkin just make me feel so warm inside. I love love love Fall food. This recipe is number one on my list. It’s easy to make, feeds an army and is only about 194 calories per serving (okay not the healthiest, but is freaking fall, people). We eat this every year for thanksgiving and have since I was little kiddo. I literally wait for it every single year. I hope you enjoy it as much as I do!
time: 30 minutes calories: 194 cal/serving ingredients: 1 cup of puréed pumpkin 2 tbsp diced onion 2 cups chicken broth 1/4 cup potato flakes (powdered) 1 tsp fresh grated nutmeg 2 tbsp margarine or butter 1 tsp of salt 1 tsp of black pepper 1 cup of milk (preferably half & half)
recipe. - Dice onions and sauté over medium heat in the margarine or butter. - Boil the chicken broth in a separate pot. - When the broth comes to a boil add the dehydrated potato flakes. - Once mixes, add the nutmeg, salt and pepper. Mix together. - Add the sautéed onion to the soup mix and stir thoroughly. - In a separate bowl mix the half & half with the pumpkin purée until thoroughly mixed. Then add the mixture to the chicken broth. - Mix together and summer for 20 minutes stirring occasionally.
Ok ya'll, I don't know about you, but I freaking love potatoes. Mashed potatoes, baked potatoes, french fries, potatoes au gratin. If its a potato or has potato in it, I will eat it. We all know that potatoes aren't totally healthy. They are a starchy, carby (is that a word?), not so scale friendly food. I decided to start mixing it with my veggies so that instead of a full serving of potatoes it's really half of a serving since it's mixed with some vegetables. I end up feeling like I've eaten a bunch of the delicious starch, but in reality it's not really that much. I asked you guys via Instagram if you wanted this recipe and had only one person say no (they probably don't like brussels sprouts). So here it is! Enjoy!
1 bag of potatoes - Fingerling or Petite Medley. (I use these)
1 bag of brussels sprouts
1 tbsp cajun seasoning. (I use Tony Chacheres, because I live in the South ya'll) You can make your own my mixing 1/2 tsp of each (cayenne, chili powder, garlic salt, celery salt, dried crushed sage, dried crushed basil, dried crushed oregano, salt & pepper)
4 strips of bacon (optional)
1 tbsp of Olive Oil
Non-stick spray (I use coconut oil spray)
Preheat over to 425 degree.
Slice the brussels sprouts and potatoes into halves.
Toss the sprouts and potatoes with olive oil and dry seasoning until evenly coated.
Line a baking sheet with foil and spray with non-stick spray.
Lay the potatoes and sprouts onto the baking sheet in one even layer.
Bake for 25 minutes.
Note* If you decide to add the bacon, just cook like normal, chop into small pieces and toss with the medley before serving.
Tilapia is probably the easiest and most versatile fish out there. Not to mention that it is lean and low calorie, yet packs on the protein. There's tilapia fish tacos, baked tilapia, blackened tilapia, fried tilapia, tilapia tenders, sauteed tilapia (all said in my best Bubba voice). This foil baked tilapia made with simple ingredients is easy and the best part is that if the fish is frozen, that's totally ok.
heat 1 tbsp of olive over in a large pan over low heat.
thoroughly wash and drain spinach and add to the pan stirring occasionally as to coat spinach in olive oil.
thoroughly wash, drain and slice mushrooms, add to the spinach and mix so that the mushrooms and spinach are evenly distributed.
add the juice of 2 to 3 lemons to the pan.
stir all ingredients lightly and cover.
let simmer for 7-10 minutes stirring occasionally.
drain the excess liquid in the pan and serve warm.
disclaimer.The spinach will reduce in volume substantially so add spinach and/or mushrooms as you please. My husband loves his lemon juice so he enjoys it more on the citrus side. Feel free to customize as you please!
